A computer for semi-professional audio editing and gaming + about 50/50 – what to buy?

After a long time, now is the time to assemble a new computer and purchase the individual components. I would like to use the PC for semi-professional audio editing as well as for ambitious gaming. The whole thing is roughly balanced. What’s most important to me is that, regardless of the graphics card, this thing will work reliably for several years. Additionally, power consumption isn’t particularly important to me, as the computer only runs for a few hours a few days a week, and somewhat irregularly. 1-2 watts of power consumption or not is negligible throughout the year. What matters to me is: the appliances must be modern, they must be quiet and there must be no heating. I currently have an Intel CPU i9 14700K and a Ryzen 9 7950x in mind. Since I don’t want to replace the CPU or MB for the next 3-4 years, the EOL socket won’t be a big deal. I’m hesitating. Therefore, at this time, he is simply a high-level wizard.

1. Do you want to play on PC? If yes, what?
Yes. Sim Racing, Witcher 3, GTA. Details in high+ if possible

2. Do you want to use the computer to edit photos/music/videos or similar? As a hobby or are you a professional? What software will you use?
I use PC to digitize records with Wavelab Pro, work with FL Studio (requires high mono core power), and occasionally Ableton and various VSTs – I want to add some audio equipment in the future.

3. Do you have any special requirements or wishes (certain brands and manufacturers, overclocking, a particularly quiet computer, RGB lighting, …)?
It should be a quiet calculator, not a thermal power plant.

4. How many screens do you want to use? Model, resolution and refresh rate (Hz)? G-Sync/FreeSync? How many FPS do you want to see?
I have an LG UltraGear 27GP850 that I want to use. So it tends to be an NVidia graphics card. Is 12GB enough for old games in terms of resolution? fps? It should be liquid, without jerking

5. Do you still have an old computer, and some of its components can still be used?
